Procedure
The secret to a good pasta with mint and ricotta is to make the ricotta liquid and creamy, with the same consistency as cream so that it envelops the pasta.
First, put a pot with salted water on the stove and bring it to a boil.
When the water begins to boil, add the spaghetti and cook over high heat for the time indicated on the package. After 5 minutes, pour a couple of tablespoons of water into a bowl and add 4 mint leaves to release the flavor into the water.
After 5 minutes, add the ricotta, break it up with a spoon or fork, and mix it with the cooking water until you get a thick and creamy mixture similar to cream.
All that’s left is to drain the spaghetti once cooked and toss them in the creamy ricotta to combine and absorb the flavor.
