Ingredients for 4 servings
- 14 oz ground beef
- 3.5 oz sausage
- 1.75 oz Parmigiano Reggiano DOP
- 1 egg (medium)
- 1/4 cup carrots
- 1/4 cup onions
- 1/4 cup celery

Procedure
The secret to a soft meatloaf lies in the meat used and the cooking method. Here are the steps to follow for a soft and juicy result.
Cut the carrot, celery, and onion into very small cubes, similar to those used for classic soffritto.
Once cut, you can use them raw or sauté them in a pan with a little olive oil for 5 minutes to make them softer.
Now place the minced meat in a large bowl, add the soffritto, the egg, and mix the ingredients well together.
Finally, add the cheese, crumbled sausage, and spices so that the ingredients blend and compact.
After mixing the ingredients well, place the mixture on a sheet of parchment paper and use a spoon to shape it. If needed, after compacting the meat, close the sides of the parchment paper as if it were a candy.
The preparation is finished, open the parchment paper and place the meatloaf on the baking tray for cooking.
Bake in a preheated fan oven at 340°F and cook for 40 minutes.
Halfway through the cooking, check the meatloaf and turn it if necessary. For an outer browning, you can also turn on the grill function if needed.
After 40 minutes, remove from the oven.
