Quick Bread Loaves, Soft Inside and Crunchy Outside

Do you crave homemade, fragrant, and crunchy bread, but don’t have half a day to dedicate to rising? These quick bread loaves are just what you need! With a short rising time (about 1 hour / 1 hour and 30 min.) and a simple dough, you’ll get rustic rolls, crispy on the outside and soft inside, perfect for serving every day.
No complex kneading or folding required: just genuine ingredients, a bowl, and a bit of patience for the rising… and the smell of freshly baked bread will fill your kitchen!

It’s a simple bread, unpretentious, that I learned to prepare a few years ago during the lockdown… Do you remember that period? We couldn’t go out, so we had to get creative! As they say, necessity is the mother of invention! Since then, I’ve never abandoned it, and I often make this bread on Sundays or when I simply don’t feel like going out to buy it!

Ingredients

  • 4 cups all-purpose flour
  • 0.5 oz fresh yeast
  • 1.5 cups water (lukewarm)
  • 1 tsp sugar
  • 1.5 tsp salt
  • 1 tsp extra virgin olive oil
  • as needed semolina (a sprinkle before baking)

Steps

Prepare the quick bread loaves!

  • Dissolve the crumbled yeast in the water, add the sugar and stir to activate the yeast.

    In a stand mixer or bowl, add the previously sifted flour and gradually pour in the water with dissolved yeast, then add a teaspoon of extra virgin olive oil and finally the salt.

    The dough will be soft and sticky, and that’s perfect!!!

    Dust a bit of flour over the dough, cover with plastic wrap and let rise for an hour/ an hour and a half in a warm, dry place.

    After the rising time, preheat the oven to 450°F.

    Transfer the dough to a baking sheet lined with baking paper and floured.

    Divide the dough into three parts, using a dough scraper, and shape 3 loaves, keeping them well-spaced.

Spray each loaf with water, sprinkle with semolina, put in the oven and bake for about 30 minutes, until the bread is golden and crispy.

Tips, Storage

Ensure the water is lukewarm, not too hot, or it might damage the yeast.

Store the bread in a paper bag to keep it fresh longer.

  • Can I use dry yeast instead of fresh yeast?

    Yes, you can replace fresh yeast with 0.14 oz of dry yeast.


  • Can I make rolls instead of loaves?

    Yes! If you prefer rolls, divide the dough into 8-10 balls, shape them into rolls, and follow the same procedure.

  • My bread is too flat, how can I make it rise better?

    If the dough doesn’t rise properly, it might be due to the room temperature. Try letting it rise in a warm place, perhaps inside the oven with the light on, to promote growth.
