- 2 slices rustic bread
- 2 eggs
- 1 tablespoon vinegar
- 1 truffle
- to taste salt

Procedure
Start by preparing the poached egg following the instructions you find here. Eggs go very well with truffles, but for a better result, the yolk should be dense and creamy, and poaching is the best way.
Bring the water to a boil in a large pot, when the water starts boiling, reduce the heat and let it simmer. To improve the cooking of the yolk, you can add a few drops of vinegar, which improves the cooking of the egg white but changes the flavor of your egg.
When the water is at the right temperature, create a vortex with a spoon where you will pour the egg. The water should rotate quickly on itself to incorporate and wrap the egg white on itself during cooking in water.
It takes 3-4 minutes to completely cook the egg white while leaving the yolk creamy. Gently drain the egg and let it dry on paper towels, and when it’s dry, place it on the rustic bread bruschetta.
On another burner, heat the griddle, and when it’s hot, toast the bread slices to get the typical grilled look with charred stripes, turning and cooking the bread on both sides.
Grate the truffle generously on the bruschetta; with the heat of the bread and the egg, you will smell the truffle aroma spreading in the air.
