Santiago Cake

Santiago Cake or almond cake without flour and thus gluten-free, suitable for everyone. The Tarta de Santiago or Santiago Cake is a simple and historical dessert from Galicia, a famous almond cake that pilgrims can taste along the entire route. It is also known as Tarta de Compostela or simply Spanish almond cake. Speaking of the route, we are talking about 500 miles, called the French Way: it starts from the Pyrenees and ends in Galicia, in the Spanish city of Santiago de Compostela, where the relics of James (Santiago) the Greater, apostle of Jesus, are kept. Since 1985, Santiago de Compostela has been a UNESCO World Heritage Site, and its almond dessert is famous worldwide. Personally, the first time I tried it, my friend made it, and of course, since I love almonds, I immediately loved it, let alone not making it myself! I should have published this fantastic cake on July 25th, St. James’s Day, but you will surely understand that it was impossible! I just couldn’t wait to introduce it to you.

Ingredients needed to prepare the Santiago Cake

  • 9 oz almonds
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 5 eggs
  • 1 lemon (grated zest)
  • 1 orange (grated zest)
  • 1/3 cup chopped almonds
  • 1 pinch cinnamon powder
  • 1 pinch salt

Steps

  • Place 9 oz of almonds in a food processor and grind them to a fine flour, and coarsely chop the remaining 1/3 cup.

  • Combine both.

  • In a mixer, beat the eggs with the sugar and a pinch of salt until they are fluffy and light.

  • Add the chopped and ground almonds, the grated zest of the orange and lemon with a pinch of cinnamon.

  • Butter a 9.5-inch pan.

  • Pour the mixture into the pan. Mine is springform, and I placed parchment paper on the bottom.

  • Bake in a static oven at 340°F for 40 minutes.

  • Transfer it to a serving plate once it cools.

  • Place the St. James cross stencil in the center and dust with powdered sugar.

  • And here it is, ready to be enjoyed.
