  • 7 oz tomatoes
  • 1.4 oz grated Grana Padano
  • 2 tbsp breadcrumbs

  • extra virgin olive oil
  • A few leaves thyme

Steps

To make perfect baked zucchini and tomatoes, start by oiling the bottom of the baking tray to prevent the vegetables from sticking during cooking.

  • Continue by slicing both zucchini and tomatoes into rounds. Then place a first layer of zucchini, slightly overlapping them to ensure even cooking.
    Next, add a layer of fresh tomatoes, which will give flavor and softness to the dish. Season with salt and cover with a generous tablespoon of grated cheese, which will enrich the recipe with taste and creaminess.

  • Repeat the process, creating a second layer of zucchini followed by a second layer of tomatoes. At this point, season the surface with salt again, drizzle with a bit of extra virgin olive oil, the remaining grated cheese, a tablespoon of breadcrumbs for a crunchy crust, and a few thyme leaves for an irresistible aroma.
