Couscous with prawns is a dish that tastes of the sea but brings us back to land thanks to the flavor of the zucchinis and the citrus notes of the lemon. To make this dish, I used pearl couscous which has slightly larger grains, you can easily find it in supermarkets, I bought it at Coop.

Ingredients
- 1 cup Pearl Couscous
- 2 zucchinis
- 9 oz prawns
- 1 lemon
- 1 bunch chives
- to taste extra virgin olive oil
- to taste fine salt
- 1 tbsp butter

Steps
Let’s start by putting a pot with plenty of salted water on the stove for cooking the couscous, it will take about 10 minutes from boiling.
In the meantime, dice the zucchinis, chop the chives and clean the prawns by removing the shells.
Now sauté the zucchinis in a pan with a drizzle of oil and a pinch of salt, when they are browned, add the prawns and the juice of a quarter of a lemon. Cook for just a couple of minutes, until the prawns turn color.
Next, add the couscous that has been drained and 100 ml (about 1/2 cup) of cooking water that has been set aside. Cook until the water is absorbed but without drying out completely. All that remains is to finish the couscous with a tablespoon of butter off the heat. Plate, garnish with chives, and enhance with a few drops of lemon juice. Our Couscous with prawns is ready to be enjoyed.
