Simple, fast, delicious.
The XXL tart without mold is a very simple dessert to prepare, quick thanks to my oil-based shortcrust pastry that does not need to rest in the fridge, fragrant thanks to the presence of vanilla notes and lemon zest, and delicious with its filling of creamy jam 🙂
Besides being quick, I love this special oil-based shortcrust; it has cornstarch, powdered sugar, and baking powder that make it perfectly crumbly and with a melt-in-your-mouth consistency, now you just have to try it… It will win you over at the first bite 😊

Ingredients
- 4 eggs (large)
- 23 oz all-purpose flour
- 5.3 oz cornstarch
- 14 oz powdered sugar
- 1 cup corn oil
- 0.56 oz baking powder
- 1 pinch salt
- zest of 2 untreated lemons
- 1 tablespoon vanilla essence
- 25 oz jam of choice (I used apricot, but you can use whichever you prefer, even multiple flavors)

- 1 Pastry Wheel pastry wheel
- 1 Bowl mixing bowl
- 1 Rolling Pin rolling pin
Steps
Sift the flour together with the baking powder and cornstarch.
Place the eggs in a large bowl, add the oil and mix, add the sugar, lemon zest, pinch of salt, vanilla, and mix, also add the sifted dry ingredients a little at a time and knead until a dough is formed, you can work the dough in the indicated order but with the planetary mixer using the K hook.
Transfer the dough to a pastry board and knead until smooth and homogeneous (if it sticks to your hands, add a little more flour).
The oil-based shortcrust is ready, no need to rest in the fridge.
WITH THE BIMBY:
Place the eggs in the bowl 20 sec.Speed 2.
Add the oil, sugar, lemon zest, pinch of salt, vanilla 30 sec.Speed 2.
Also add the flour, cornstarch, and baking powder and knead 3 minutesKnead.
Transfer the dough to a pastry board and knead until smooth and homogeneous (if it sticks to your hands, add a little more flour).
LET’S PREPARE THE TART:
Take the baking sheet provided with the oven, it will be used to bake our XXL tart.
Preheat the oven to 340°F (static).
Roll out 3/4 of the shortcrust on the lightly floured pastry board, you need to get a rectangle as large as the baking sheet, with the help of the rolling pin, place the obtained rectangle on a sheet of parchment paper and then transfer it to the baking sheet (you can also first cover the baking sheet with the paper and then place the dough on it, I find the previous step easier).
Cover the entire tray with the jam, leaving about 1 cm around the edge without.
Roll out the remaining shortcrust and with a pastry wheel make long strips.
Cover the edges of the tart with the strips and then decorate it as you would for a traditional tart.
Bake the freshly prepared tart in the lower part of the oven (just above the base) at 340°F for about 30 minutes, until it turns golden.
