Pasta with zucchini, prosciutto, cherry tomatoes, and stracchino.

Simple, quick, and very flavorful.

This pasta is a creamy, tasty, and delicious first course, prepared in just a few minutes, and it wins everyone over at the first taste. It’s a perfect dish for the whole family, for guests, or among friends.

Ingredients

  • 13 oz pasta (such as fusilli, caserecce, penne, etc…)
  • 3 zucchini
  • 2 oz prosciutto (in a single slice)
  • 2/3 cup tomato sauce
  • 1 onion
  • 5 cherry tomatoes
  • 3.5 oz stracchino
  • 1 bunch parsley
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

Steps

  • Peel and finely chop the onion, dice the prosciutto into small cubes.

    Rinse some parsley and chop it, set aside.

    Rinse the cherry tomatoes and cut them in half or into four parts.

    Wash the zucchini well, remove both ends, and dice them.

    Place a pot with plenty of water on the stove to cook the pasta.

  • In a large pan, add a generous drizzle of oil, add the prosciutto and onion, and lightly brown them over low heat while stirring. Add the zucchini and cook them quickly. At this point, add the tomato sauce and cook everything for a few minutes over high heat.

    Add the cherry tomatoes, let them wilt over high heat for a few minutes. Once wilted, add the stracchino, adjust salt, add a pinch of pepper, and turn off the heat.

    Boil the pasta in the water, salt it, and cook it 1 minute less than indicated on the package. Use a slotted spoon to transfer it directly into the pan with the sauce, return to the heat, and mix for a minute, adding a bit of pasta cooking water if needed to make it creamy. Add the chopped parsley.

  • Plate the dish and serve immediately.
