Grandma’s super soft bundt cake.
Simple, super soft, and delicious.
The grandma’s super soft bundt cake, as the name suggests, is a soft cake like a cloud, with a delightful aroma of vanilla and lemon. It’s very delicious, a dessert that literally melts in your mouth. Perfect for snack and breakfast, it will be a joy for all ages.

Ingredients
- 4 large eggs
- 3 cups all-purpose flour
- 3/4 cup sugar
- 1 container vanilla yogurt (4.4 oz)
- 2/3 cup corn oil
- juice of half a lemon
- zest of 1 lemon
- 1 tablespoon vanilla essence
- 1 pinch salt
- 1 packet baking powder

- 1 Electric Whisk electric whisk
- 1 Bowl bowl
Steps
Preheat the oven to 340°F and butter a 9.5/10.2 inch bundt cake pan.
Using an electric whisk, beat the eggs with the sugar and a pinch of salt.
While beating, add the oil, lemon juice, vanilla essence, then the yogurt and grated lemon zest.
Sift the flour with the baking powder and fold it into the egg mixture by hand with a spatula.
Once the batter is smooth, pour it into the buttered pan.
Bake at 340°F for about 40 minutes, check with a toothpick (If it’s done, it should be dry, otherwise continue baking for a few more minutes).
Let the bundt cake cool, place it on a tray, and if you like, dust with powdered sugar.
Butter a 9.510.2 inch bundt cake pan.
Preheat the oven to 340°F.
Place the butterfly whisk attachment in the bowl.
Separate the yolks from the whites.
Place the egg whites with a pinch of salt in the bowl 3 minutes/speed 4.
Set them aside in a bowl.
Place the yolks in the bowl with the sugar, grated lemon zest, and whisk 2 minutes/speed 4.
Remove the butterfly whisk and add the flour, oil, lemon juice, and yogurt. 50 Sec./speed 3.
Add the baking powder 20 Sec./speed 3.
Turn off the Thermomix and gently fold in the egg whites a little at a time using a spatula from bottom to top.
Once the batter is smooth, pour it into the buttered pan.
Bake at 340°F for about 40 minutes, check with a toothpick (If it’s done, it should be dry, otherwise continue baking for a few more minutes).
Let it cool, place on a tray, and if you like, dust with powdered sugar.
