The apple and ricotta cake is a special dessert you cannot miss, easy to prepare, quick, super soft, and delicious, with a unique aroma and flavor that will conquer you at the first taste, plus it is low in fat so perfect if you want to watch your weight 🙂

Ingredients
- 4 eggs (medium)
- 1 cup sugar (2/3 cup for a less sweet version)
- 9 oz ricotta
- 2 1/2 cups flour
- juice of 2 lemons
- grated zest of one untreated lemon
- 1 pinch salt
- 1 packet baking powder
- 2 large apples

- 1 Bundt pan 24 cm bundt pan
- 1 Bowl glass bowl
- 1 Spatula silicone spatula
Steps
Butter and flour a 24 cm bundt pan.
Peel the apples, slice them thinly, and place them in a bowl with the lemon juice.
Preheat the oven to 350°F.
Sift the flour and baking powder together.
Place the eggs and the pinch of salt in a large bowl and whisk with an electric mixer until the mixture is puffy and foamy, add the grated lemon zest, sugar, and ricotta, mix with the electric mixer until you have a smooth mixture, gradually add the flour mixture and continue mixing with the mixer, also add the juice from the apples and mix until you get a smooth and homogeneous mixture.
Pour the mixture into the buttered mold, place the apple slices on the surface of the cake, letting them sink halfway into the batter.
Bake in a preheated oven at 320°F for about 35 minutes, check the cooking with a toothpick, it should come out dry.
Once the apple and ricotta cake is cooked, take it out of the oven, let it cool, and then dust it with powdered sugar.

Pour the mixture into the buttered mold, place the apple slices on the surface of the cake, letting them sink halfway into the batter.
Bake in a preheated oven at 320°F for about 35 minutes, check the cooking with a toothpick, it should come out dry.
Once the apple and ricotta cake is cooked, take it out of the oven, let it cool, and then dust it with powdered sugar.
