Ingredients
- 2 3/4 cups Manitoba flour
- 0.35 oz fresh yeast
- 1/4 cup sugar
- 1/4 cup butter (at room temperature or lard)
- 1 teaspoon honey
- 1 egg
- grated peel of one untreated lemon
- 1 pinch salt
- 1 vanilla essence
- 1/2 cup water (at room temperature)
- 150 chocolate chips
- 1 egg
- a little milk

Steps
Put the chocolate chips in the freezer.
Dissolve the yeast in the water.
Put the flour, sugar, egg, honey, grated lemon peel, and vanilla in the bowl of the stand mixer, add the dissolved yeast.
Start mixing the dough with the flat beater, as soon as the ingredients are mixed together, add a pinch of salt and the butter, mix well, you must obtain a nice smooth and homogeneous dough that detaches from the sides of the stand mixer, at this point work it for another 5 minutes at moderate speed (you can also knead by hand following the same procedure, but kneading with your hands).
Add the chocolate chips and incorporate them into the dough.
Let it rise in a large bowl for about 2 hours covered with a cloth, it should double in size.
Bimby Version:
Put the chocolate chips in the freezer.
Put the yeast and water in the mixing bowl for 10 sec./speed 2.
Put the flour, sugar, egg, honey, grated lemon peel, and vanilla in the bowl of the stand mixer, add the dissolved yeast, work for 4 minutesKnead.
At this point, also add a pinch of salt and the butter for 5 minutesKnead
Transfer the dough onto a lightly floured pastry board and manually add the chocolate chips.
Let it rise in a large bowl for about 2 hours covered with a cloth, it should double in size.
After the rising time, divide the dough into 13 parts and form 13 balls, round them on the pastry board with the palm of your hand, then place them on a baking sheet lined with parchment paper, well spaced apart.
Once all the buns are prepared, let them rise until doubled in size (it took me 3 hours, but it depends on the external temperature).
Once risen, preheat the oven to 392°F.
Brush the buns gently with beaten egg mixed with a little milk and let rest for 10 minutes.
Bake the raisin buns in a preheated oven at 392°F for about 15 minutes, until nicely golden.
Remove from the oven, immediately cover with a clean cloth and let cool.
