To prepare this baked chicken with potatoes and mushrooms, the main ingredient is the potatoes, so you need tasty ones. I used the delicious Le Gustose potatoes from Marchese ortofrutta, firm and flavorful yellow-flesh potatoes, delicious no matter how they’re cooked, the best potatoes I’ve ever tasted, and if you try them, you’ll agree with me 😉

Ingredients
- 1 whole chicken cut into pieces with skin on, or chicken legs
- 1.76 lbs yellow-flesh potatoes
- 1 onion
- 8.82 oz mushrooms (fresh or frozen)
- 2 tsp white wine vinegar
- 2 tbsps white wine
- 1 tsp roast seasoning
- to taste rosemary
- to taste salt
- to taste extra virgin olive oil
- to taste pepper

Steps
Wash the potatoes, peel them, and cut them into not very large chunks, wash them again to remove the starch.
Clean the mushrooms if using fresh ones and slice or cube them.
Rinse the chicken pieces; if any piece is too large, cut it in half with a sharp knife on a cutting board (all chicken pieces should be about the same size); remove any feathers if present.
Peel the onion and chop it into pieces.
Place the chicken, onion, mushrooms, and potatoes in a large bowl, add the vinegar, oil, sprinkle the seasoning over, adjust the salt (considering that the roast seasonings can be salty), add a grind of pepper, and mix everything well, then let it marinate for 10 minutes.
Pour a drizzle of oil on the bottom of a baking dish.
Lay the marinated potatoes, onion, and mushrooms with the chicken in the baking dish and place the chicken pieces on top, scatter the rosemary here and there, add the white wine and a drizzle of oil.
Bake at 356 degrees Fahrenheit for 45 minutes, shake the pan a bit (without stirring with a spatula or fork, as the potatoes would crumble); after baking, increase the oven temperature to the maximum until everything is nice and golden and crispy; it takes about an hour in total.
