The savory strudel with mortadella and cream cheese is a rustic dish with a delicious non-leavened dough and a savory filling, perfect for dinner accompanied by a salad or as an appetizer or in a buffet cut into slices. Simple and quick to prepare, it will win you over at the first bite.

Ingredients for the dough:
- 3 1/2 cups all-purpose flour
- 3/4 cup water (at room temperature, preferably sparkling)
- 1/3 cup olive oil
- 1 tsp instant yeast for savory preparations
- 2 tbsps dry white wine
- 1 1/2 tsps salt
- 10 1/2 oz stracchino (or ricotta, or robiola, or philadelphia)
- 7 oz asiago (or scamorza)
- 4 tbsps milk (you might need a bit more)
- to taste salt
- to taste pepper
- 9 oz sliced mortadella

Steps
In a bowl, put the flour and salt and mix, make a well in the center and add the wine, instant yeast, oil, and water, mix everything until a dough forms.
Transfer the dough to a work surface and knead it with your hands until you get a smooth and homogeneous dough that does not stick to your hands. Add a bit more water or flour if needed.
Let it rest for 10 minutes at room temperature or in the fridge if it’s hot.
With the Thermomix:
Put the flour, yeast, and salt in the bowl 10 sec/speed 1, add the wine, oil, and water 3 min/Dough function.
Transfer the dough to a work surface and knead it with your hands until you get a smooth and homogeneous dough that does not stick to your hands. Add a bit more water or flour if needed.
Let it rest for 10 minutes at room temperature or in the fridge if it’s hot.
Filling:
Blend the asiago.
In a bowl, mix the stracchino with 4 tablespoons of milk and a grind of pepper until you get a creamy mixture.
Add the blended asiago and mix again, add a bit more milk if needed, you should get a creamy mixture.
Let’s prepare the strudel:
After the resting time of the dough, preheat the oven to 350°F.
Roll out the dough with a rolling pin on a floured surface into a rectangle about a quarter inch thick.
Cover with the cream cheese, leaving 3/4 inch all around.
Cover the cream cheese with the mortadella, and roll up the rectangle from the long side to form a roll, close the edges well by folding them underneath, transfer the savory strudel to a baking sheet lined with parchment paper with the seams facing down.
Brush with oil and sprinkle with sesame seeds.
Bake in a preheated oven on the lower-middle rack for about 30 minutes, until golden brown.
Remove from the oven, let it cool for 10 minutes and serve, it’s also great warm or cold.
