The chicken with potatoes and zucchini au gratin in the oven is a very simple second course to prepare, tasty and flavorful. A complete second course with a side dish that will make everyone happy with very little effort.

Ingredients

  • 1.5 lbs chicken breast (in one piece)
  • 2.2 lbs yellow potatoes
  • 3 zucchini
  • 2.8 oz breadcrumbs
  • 1.4 oz grated Parmesan cheese
  • 1 tsp roast herbs
  • as needed extra virgin olive oil
  • as needed pepper
  • as needed salt
  • 1 tbsp vinegar

Steps

  • Place a pot of water on the stove.

    Wash the potatoes well, peel them and cut them into small chunks, rinse them again and put them in boiling water, add salt, a tablespoon of vinegar and cook for 20 minutes after the water starts boiling.

    Meanwhile, cut the chicken breast into chunks roughly the same size as the potatoes, removing any bones, fat, or skin.

    Also rinse the zucchini, remove the two ends, and cut them into slices less than 1 inch thick.

    In a bowl, mix the breadcrumbs with the grated cheese, a dash of pepper, and roast herbs, and combine everything.

  • As soon as the potatoes are almost cooked, preheat the oven to 356°F (180°C).

    Lightly oil a baking tray large enough to hold all the ingredients.

    Drain the potatoes, place them in a large bowl, and season with a bit of oil.

    Add the chicken pieces to the potatoes and zucchini, season with salt if needed (the breading is already flavorful), add the breadcrumb mixture, and mix well to coat the potatoes, zucchini, and chicken.

    Spread the mixture of potatoes, zucchini, and chicken evenly in the baking tray, cover with the remaining breading, and drizzle with a bit of oil.

    Bake at 356°F (180°C) for about 35 minutes, the potatoes, zucchini, and chicken should cook and brown on the surface.

    Serve immediately.
