Stuffed Tortelli with Purple Cabbage

Finally, it’s cooking time! With mom’s help, today I prepared these delicious stuffed tortelli with purple cabbage.

Ingredients

  • 3 eggs
  • 10.5 oz all-purpose flour
  • as needed semolina flour
  • 8.8 oz purple cabbage (braised)
  • 7 oz ricotta
  • 4 tablespoons grated Parmesan cheese

Steps

First, prepare the PASTA.
Create a well with the flour and some semolina on a wooden work surface and put the eggs inside. Slightly beat them with a fork and start kneading until you form a compact, smooth, and firm dough. Cover it with plastic wrap and let it rest for at least half an hour.
Prepare the FILLING by mixing the ricotta, Parmesan, and the purple cabbage that you previously sliced and braised in a pan with a pat of butter, some water, and a pinch of salt. Blend everything together until you have a firm mixture (if necessary, add more Parmesan), put it in a piping bag and place it in the fridge.
Now prepare the TORTELLI.
Roll out the pasta with the appropriate machine so that it is thin enough, or if you are skilled, with a rolling pin, as the pasta makers do. Create strips and, on one of these, with the piping bag, place well-spaced heaps of filling (adjust the amount based on the mold you use).

Then close them with another strip of pasta and cut them one by one with the mold, being careful not to leave air inside.

Arrange them on a proper mesh or on a tray sprinkled with semolina so they don’t stick, and if you don’t cook them right away, store them in the freezer.

  • If you have leftover filling, you can use it to stir into a plain risotto to make it delicious!

How to Season Them

Being very flavorful, the filling makes these tortelli delicious simply seasoned with butter and sage, but if you prefer more saltiness, you can add sautéed and crumbled sausage.
