The mussel broth is delicious served as an appetizer or as a main course, it is light and quick without counting the time for cleaning the mussels but don’t be discouraged, it’s really worth cleaning 2 kg of mussels to have this dish on the table.


A tasty dish served with slices of grilled bread or in winter with polenta that satisfies everyone, you’ll see you’ll make a great impression.


In summer you can serve it even warm and if you like spicy, add plenty of chili pepper as it goes very well, I used little because it doesn’t sit well with someone in the house, but I made the sauce with fresh San Marzano tomatoes instead of using tomato puree, try it to believe it.

Ingredients for Mussel Broth

  • 4.4 lbs mussels
  • 14.1 oz San Marzano tomatoes
  • 1 clove garlic
  • 2 fresh chili peppers
  • 1 bunch chopped parsley
  • 2 tablespoons extra virgin olive oil

Preparation of Mussel Broth

  • To prepare the mussel broth peel and crush the garlic clove, then let it brown in a large pan that can hold the mussels.

  • Once the garlic clove is browned, remove it and add the chopped tomatoes, let them absorb the flavor well, then lightly salt (the mussels are already salty).

  • Let the tomato sauce absorb flavors for at least 30 minutes on low heat, adding the parsley and chopped fresh chili peppers without seeds towards the end.

  • In the meantime, clean the mussels as explained HERE.

  • At this point, you can choose to open them in a pan alone or add them still closed to the pan with the sauce.

    I added them still closed to the sauce.

  • Then thin the sauce with a little water and add the mussels, always on low heat with the lid on, let the mussels open.

    It will take 5 minutes.

  • Once opened, turn up the heat, remove the lid and let the sauce thicken if you like it nice and dense.

  • Otherwise, if you like it light and for bread dipping, your mussel broth is ready and..

How to Store Mussel Broth

You can store mussels in broth for 2 days in the refrigerator in an airtight container.
