  • 30 oz potatoes
  • 7 oz fontina cheese
  • 1.75 oz black olives
  • 3.5 oz artichokes in oil
  • 2 pinches salt
  • 2 tbsp extra virgin olive oil
  • 2 pinches pepper
  • 2 tbsp milk (to melt the fontina cheese)

Preparation of Potato Salad with Fontina Cheese and Artichokes

  • To prepare the potato salad with fontina cheese and artichokes first cook the potatoes with their skins, either steamed or in a pot full of water until they are very tender but not falling apart.

  • Let them cool slightly, then peel and cut them into not too small pieces.

    Drain the artichokes from their preserving oil and slice the olives into rounds.

  • In a bowl, place the potato pieces and season with salt, pepper, and EVO oil; mix together.

    Add the artichokes and olives.

  • In a saucepan suitable for a bain-marie, bring 2 inches of water to a boil.
