Ingredients for the Strawberry and Ricotta No-Bake Cake
- 12 oz digestive biscuits (chocolate chip optional)
- 5 tbsp butter (melted)
- 8 oz strawberries
- 1 cup liquid cream
- 4.5 oz ricotta
- 1/2 cup sugar

Preparation of Strawberry and Ricotta No-Bake Cake
Prepare the strawberry and ricotta no-bake cake by finely grinding the biscuits using a food processor or mixer.
Melt the butter in a bain-marie or microwave for 40 seconds and add it to the biscuits.
Mix to combine.
Line a 9.5-inch springform pan with parchment paper and form a biscuit layer by pressing it down firmly.
Chill in the fridge for at least 2 hours.
Meanwhile, wash and slice the strawberries thinly, reserving a few for decoration.
Whip the well-chilled cream to very stiff peaks.
Mix the ricotta with the sugar and gently fold it into the cream.
Incorporate the strawberries and mix.
Pour the mixture over the chilled biscuit base.
Decorate with biscuit crumbs and the reserved strawberries, and chill in the fridge for at least 4 hours or in the freezer for 1 hour if you plan to eat it immediately.
