Ingredients for Whole Spelt Bread
- 2 1/2 cups whole wheat flour
- 3/4 cup einkorn spelt flour
- 3/4 cup Kamut® flour
- 2 pinches salt
- 1/4 oz dry yeast (0.7 oz of fresh yeast)
- 1 tsp sugar
- 1 3/4 cups water

How to Prepare Whole Spelt Bread
Prepare the whole spelt bread by mixing the flours in a large bowl.
In a jug, dissolve the dry yeast and sugar in 100ml of warm water (no more than 77°F), let it activate for 10 minutes.
Incorporate into the flour, and start mixing, now with the remaining water, (280ml),
add 200ml, knead for 5 minutes, pour the remaining water a little at a time, do not add more until it is completely absorbed. Before pouring the last water, add the salt, work for 7/8 minutes.
Turn onto the work surface, flatten the dough, make folds, bringing the corners towards the center, turn it upside down and cover with a bowl, leave for 30 minutes.
After this time, repeat the operation, and leave for another 30 minutes.
After the time, divide the dough into 3 parts, then form 3 sausages and braid them.
Place the braid inside a baking tray covered with parchment paper, cover well and let it rise for at least 3 hours.
The dough should double in volume.
Bake at preheated 428°F placing a small pot with water in the lower part of the oven before turning it on, so that steam forms inside. Bake for 20 minutes.
Remove the pot and lower the temperature to 356°F for another 20 minutes.
