The grilled eggplants in oil are a summer must in our kitchen, we prepare them often and keep them in the refrigerator, where they last for at least 5 days but never more than 1 or 2 days, as we also eat them as a snack with some good toasted bread because they are really good and very simple to make.
Then, if you want, you can prepare them in quantity and put them in glass jars, and by sterilizing them, you’ll have a preserve for the winter when eggplants are no longer in season.

Ingredients for grilled eggplants in oil
- 2 oval black eggplants
- 2 cloves garlic
- 1 bunch parsley
- to taste extra virgin olive oil
- 2 pinches salt
How to prepare grilled eggplants in oil
Prepare the grilled eggplants in oil by washing, trimming, and slicing them not too thinly.
If you have doubts, you can sprinkle the eggplant slices with coarse salt in a colander to drain them.
Rinse them if you have salted them; otherwise, grease a cast iron grill with some oil and grill the eggplants on both sides until cooked and the typical grill marks form.
Finely chop the garlic cloves together with the parsley then in a baking dish make a layer of eggplants, season with salt, and sprinkle with garlic and parsley.
A drizzle of oil and another layer of eggplants until you have used all the eggplants.
If you want to preserve them, place them in sterilized and dry glass jars alternating with parsley and garlic.
Top up with plenty of oil to cover well and close.
Sterilize the jars in a pot well covered with water, bringing them to a boil for at least 20 minutes.
Turn off the heat and let the jars cool inside.
Once removed, dry them and try to press the lids; if they make no noise, the vacuum has been successful, so store them in the pantry and..

Store them in the refrigerator in an airtight container for 3 or 4 days; in well-sterilized jars, they will keep in the pantry for 6 or 7 months.
