Ingredients for Creamy Boiled Potato Salad
- 1.76 lbs potatoes
- 4 friggitelli peppers (red)
- 10 black olives
- 1 tbsp salted capers
- 1 clove garlic
- 1 tbsp lemon juice
- 2 pinches salt
- 4 tbsp extra virgin olive oil
- 2 tbsp Greek yogurt
- 2 tbsp chopped parsley

Preparation for Creamy Boiled Potato Salad
Prepare the creamy boiled potato salad starting with the potatoes, wash them very well and cook them as you prefer.
I always recommend steaming or using the microwave (much faster).
Steaming takes about 40 minutes while in the microwave you just need to prick them in several spots with a fork and count 2 or 3 minutes per potato.
Meanwhile, prepare the dressing by cleaning the friggitelli, removing the stalk and inner seeds, and cutting them into coarse pieces.
Rinse the capers well, peel the garlic and remove the core, and wash the parsley.
Put all the dressing ingredients in the mixer glass except for the yogurt and oil, and blend.
If you want, you can chop with a knife until you get small pieces instead of using the mixer.
Once you have small pieces, add the oil and yogurt, then mix well to blend the flavors.
Peel the potatoes and cut them into chunks not too small, place them in a salad bowl.
Season with the prepared sauce and adjust the salt if needed.
Let the creamy boiled potato salad rest in the refrigerator for at least 30 minutes before consuming and..
