Fennel en Papillote with Carrots and Onions

A delightful and very light side dish, fennel en papillote is easily prepared with very few ingredients. I was inspired by the recipe of my dear friend La Tati Pasticciona, who makes delicious things with vegetables.
Of course, I modified some of the ingredients following her suggestions to create a light and flavorful side dish.

Ingredients for fennel en papillote with carrots and onions

  • 14 oz fennel
  • 3 carrots
  • 1 Tropea red onion
  • 2 pinches salt
  • 2 pinches black pepper
  • 3 tbsps extra virgin olive oil
  • 2 tsps dried oregano

Preparation of fennel en papillote

  • Prepare the fennel en papillote by cleaning the fennel, then cut the base and remove the fronds.

    Wash them and cut them into chunks.

  • Peel the carrots and slice them thinly.

    Clean the Tropea onion and cut it into fairly large wedges.

  • Place the vegetables in a large bowl and season them with olive oil, salt, pepper, and dried oregano. Mix everything with your hands to flavor them.

  • Preheat the oven to 356°F in static mode.

    Wet and wring out plenty of parchment paper to make the papillote, then fold it in two or three parts to cover the baking dish you will use.

  • Pour the vegetables inside, leveling well, then close the parchment paper into a papillote, tying it with kitchen string.

  • Cook the fennel en papillote for at least 40 minutes, remembering that every oven is different, so check the degree of cooking.
