- 1 sheet puff pastry
- 1 round eggplant
- 10 cherry tomatoes
- 100 ml fresh liquid cream
- 1 egg
- 5 oz fresh caciottina cheese (or caciocavallo cheese)
- 2 pinches salt
- 2 pinches pepper

Prepare the savory eggplant tart starting with the eggplants. Trim them, wash them, and cut them into not-so-thin slices.
Grill the eggplant slices on a cast iron grill for a few minutes on each side and set aside to cool slightly.
Slice the cheese, beat the egg together with the cream, salt, and pepper.
Preheat the oven to 392°F.
Unroll the puff pastry keeping its parchment paper and place it in a low, wide pan.
Make a layer of grilled eggplants, salt, and pepper, cover with cheese slices and half of the cherry tomatoes cut into pieces.
A second layer of eggplants and more cherry tomatoes and cheese to cover the surface.
Incorporate the beaten egg with the cream and any leftover pieces of cheese.
