Savory pumpkin fritters are a delicious appetizer or a finger food second course for Carnival, did you see it’s just around the corner?

These pumpkin fritters are really easy to prepare with very few ingredients, I can guarantee the kids will love them, try them and add the herbs you like best, I added parsley and some very finely chopped melting cheese so they’re not only good but also wonderfully stringy.


But I have to tell you that while looking for ideas on the internet, I came across a recipe that from the photo seemed to be from my dear friend, but then I discovered they had stolen the photo and moreover, the recipe was a real flop. My friend’s version turns out great, I revisited it, keeping more or less the same basics, but what can I say, you can’t rest easy, they steal photos and then modify recipes to mess them up, what people!!

Ingredients for Savory Pumpkin Fritters

  • 4 cups pumpkin (already cleaned)
  • 1 shallot
  • 3/4 cup all-purpose flour
  • 3/8 cup ricotta cheese
  • 2.5 oz chili-flavored fresh cheese (like Latteria or Caciotta)
  • 1 egg
  • 1.75 oz Pecorino Romano (grated)
  • 2 pinches salt
  • 2 pinches pepper
  • 1 tbsp parsley
  • 1 tbsp extra virgin olive oil

How to Make Savory Pumpkin Fritters

  • Prepare the pumpkin fritters by cutting the pumpkin into very small pieces.

    Chop the shallot and let it wilt in a pan with olive oil until it starts to become transparent, then add the pumpkin.

  • Salt and pepper, and cook the pumpkin for 10 minutes, stirring often.

    When cooked, even if still firm, blend it together with the shallot.

  • Add the ricotta, grated cheese, the egg, and the parsley, and mix very well to combine all ingredients.

  • Form the savory pumpkin fritters with slightly oiled hands, take 1 tablespoon of the mixture, insert small pieces of cheese inside, and close the fritters by compressing them slightly with your hands.

  • Arrange them on a cutting board as you prepare them.

    Heat deep oil for frying.

  • Fry a few pumpkin fritters at a time so as not to lower the oil temperature too much; once golden on all sides, drain them with a slotted spoon onto absorbent paper.
