Grilled Radicchio with Onions is a seasonal side dish that I love; with the zero-kilometer late Treviso radicchio, I could eat this dish alone for lunch and dinner.


Easy, full of flavor, and very light, it is perfect for accompanying many main courses.


The only precaution is to always choose radicchio of excellent quality, small heads with little root, intact and beautiful shiny leaves, and white root without spots, which are synonymous with old heads.

  • 4 heads red radicchio from Treviso IGP, late
  • 2 white onions
  • 3 tablespoons extra virgin olive oil
  • 2 pinches salt
  • 2 pinches black pepper
  • 1 tablespoon balsamic vinegar

How to Prepare Grilled Radicchio with Onions

  • To prepare grilled radicchio with onions, first wash and divide the heads into 2 or 4 parts if they are large.

  • Peel the onions and slice them into 1/4 inch thick rings.

  • In a large bowl, make an emulsion with oil, balsamic vinegar, salt, and pepper, and add the vegetables.

  • Mix them very well to flavor them and let them rest for at least 30 minutes.

  • Heat a cast iron grill until it becomes very hot, then use tongs to take the radicchio heads and grill them for 5 minutes on each side until they become tender and golden.

  • Arrange them on a tray and grill the onion rings for 3 to 4 minutes on each side. Add the onion rings along with the radicchio and add the liquid from the marinade.
