The puff pastry and ricotta stars are a tasty appetizer for Christmas or New Year’s Eve to offer to our guests on centerpiece trays. They are very easy to make and very delicious. Besides the filling I propose today, I also leave you other ideas to fill them differently, perhaps serving them on different trays.
There are many combinations like this ricotta and ham, others with gorgonzola and walnuts, with cream cheese and olive cream, with cheese and tuna, and many other ideas that will surely come to my mind the day of the Christmas Eve and that I will not be able to realize due to lack of time, but I will keep them in mind for Christmases to come.

Ingredients for puff pastry and ricotta stars
- 2 rolls puff pastry (rectangular)
- 130 g ricotta
- 80 g cooked ham
- 2 pinches salt
- 2 pinches black pepper
- 1/4 cup milk (for brushing)
- 2 tablespoons sesame seeds
- 1 tablespoon poppy seeds
- 2 tablespoons extra virgin olive oil

Preparation of puff pastry and ricotta stars
To prepare the puff pastry and ricotta stars, first put the ricotta in a fine-mesh strainer to lose its liquid.
Then cut the cooked ham into pieces and place it in the glass of the immersion blender along with the extra virgin olive oil and blend it very well.
Mix the ricotta with the blended ham in a bowl, season with salt and pepper, and mix everything very well.
Place in the refrigerator to rest.
Unroll the puff pastry and with a star cutter make many stars from the 2 rolls, remove the excess pastry and place the stars with their parchment paper on 2 baking trays.
Brush the stars with milk and distribute the sesame and poppy seeds a bit on each star.
You can also make some with both seeds together.
If you have the fan function of the oven, you can bake the two trays simultaneously, otherwise with static mode, one at a time.
Bake in a preheated oven at 392°F for 7/8 minutes, checking the degree of browning of the puff pastry and ricotta stars.
Once golden and puffed, remove from the oven, let cool, then cut each star in half.

Storage of puff pastry and ricotta stars
The puff pastry and ricotta stars, once filled, should be eaten immediately. However, you can prepare everything even 1 day before and keep the ricotta in the refrigerator and the stars in an airtight container out of the fridge so they stay as freshly prepared and fill before serving.
