- 2.2 lbs all-purpose flour
- 2.75 cups water
- 1 tsp salt
- 0.25 oz fresh brewer's yeast
- 2 tbsps extra virgin olive oil

Pizza Preparation with Autolyse
To prepare the pizza with autolyse like in a pizzeria, place the flour in a large bowl and incorporate 2 cups of water, mix well to absorb it.
Cover with plastic wrap and let rest for 1 hour, at most 2, to encourage gluten network formation.
Place the dough in the planetary mixer or a kitchen robot with a hook, knead again and in the meantime dissolve the yeast in the remaining water.
Add it gradually, waiting for it to be well absorbed by the dough.
Incorporate salt and oil last.
Turn the dough onto the work surface and with oiled hands work to stretch it then fold the two ends towards the middle as if making a book fold.
Place the dough in a large bowl, cover with plastic wrap and let rise in a warm place or in the turned-off oven with the light on for at least 6 hours.
Divide the risen dough using a dough cutter or knife into 4 more or less equal parts.
Sprinkle the work surface with semolina and stretch each dough, then place them in the pans.
Let it rise for another hour, always covered to prevent it from drying on the surface.
Bake the pizza with autolyse like in a pizzeria at 482°F preheated in static mode for 5 or 6 minutes, take it out, top it, and bake until the mozzarella is melted.
