The Sicilian-style stuffed eggplants are a vegetarian alternative to the traditional Sicilian recipe of sarde a beccafico. These eggplants, enriched with simple and easily accessible ingredients, are excellent to serve as finger food appetizers or as a light and quick vegetarian main course.

Ingredients for Stuffed Eggplants
- 2 eggplants
- 1 cup breadcrumbs
- 2 oz caciocavallo cheese (grated)
- 1 tbsp raisins
- 1 tbsp pine nuts
- 1 lemon
- 1 tbsp parsley
- 1 tbsp basil
- 2 pinches salt
- to taste black pepper
- to taste bay leaves
Preparation of Stuffed Eggplants
To prepare the eggplants, first trim and wash them, then slice them not too thick.
If they are bitter, sprinkle with salt and let them drain excess water in a colander, then dry them well and fry them in plenty of hot oil.
As you fry them, place them on a sheet of paper towel to absorb the excess oil.
Meanwhile, in a bowl, mix the breadcrumbs with the cheese, raisins, and pine nuts, add chopped basil and parsley, and drizzle with lemon juice and 3 tablespoons of olive oil.
Preheat the oven to 350°F in static mode.
Stuff each slice of eggplant with a generous spoonful of filling, then roll them up and secure with a toothpick.
Place the stuffed eggplants in a baking dish, separating each roll with a bay leaf.
Sprinkle with the reserved breadcrumbs, drizzle with a little olive oil, and bake for 10-15 minutes.

Storing Stuffed Eggplants
Stuffed eggplants can be stored in the refrigerator in an airtight container for 2 days.
It’s not recommended to freeze them.
