Potato, Onion, and Philadelphia Salad

This potato, onion, and Philadelphia salad is very easy and very tasty, ideal for accompanying any main course you choose or even as a tasty appetizer before a buffet dinner.


I love potatoes and I believe you do too, and this salad is really worth it since you can prepare it even the day before, and it will taste better because the flavors will blend well.

Ingredients for Potato, Onion, and Philadelphia Salad

  • 4 Potatoes
  • 12 Green olives
  • 1 Onion
  • 4 oz Cream cheese (like Philadelphia)
  • 4 tbsps Mayonnaise
  • 2 tsps Chopped parsley
  • 2 pinches Salt
  • 1 pinch Black pepper
  • 2 tbsps Extra virgin olive oil

Preparation of Potato, Onion, and Philadelphia Salad

  • To prepare the potato, onion, and Philadelphia salad, first wash the potatoes very well under cold running water and remove all the dirt by scrubbing them well with a scrubber.

  • Then cook them in a pot full of water for the necessary time.

    Otherwise, prick the skin with a fork in several places and cook in the microwave, counting 2 minutes per potato.

    Check the cooking by piercing them with a knife; if it penetrates easily, the potatoes are ready; otherwise, extend the cooking by one or two more minutes.

  • Meanwhile, slice the onion thinly and divide the pitted olives in half.

    Mix the cream cheese with mayonnaise and EVO oil with a fork to combine everything and make it creamy.

  • Once the potatoes are cooked, let them cool slightly, then peel them, cut them into chunks, and place them in a large bowl.

  • Season with salt and pepper, add the coarsely chopped fresh parsley, onion, and olives.

  • Finally, incorporate the cheese prepared earlier and, using two tablespoons, mix to blend everything together.

    Taste and adjust the seasoning if necessary, and if you like, you can add another drizzle of oil.
