Preparation of Puff Pastry Cannoli with Custard

  • To prepare the puff pastry cannoli with custard start by preparing the custard, bringing the milk with the vanilla pod to a near boil.

  • Meanwhile, beat the egg yolks with the sugar and flour using a hand whisk to avoid lumps.

  • Now proceed to slowly pour the almost boiling milk over the egg yolk mixture, always stirring with the whisk, and bring everything to the heat.

  • Continuously stirring, cook the custard until it thickens to the desired consistency.

Transfer it to a bowl and cover with cling film on contact, allowing it to cool.

  • Unroll the puff pastry and cut into strips, then wrap them around metal cylinders, slightly overlapping the strips.

  • Brush with beaten egg and sprinkle with sugar, then place the cylinders on a baking sheet lined with parchment paper.

Bake the cannoli in a preheated oven at 392°F for at least 12 minutes or until golden brown.

  • Once the custard is at room temperature, put it into a pastry bag with a star tip and generously fill the puff pastry cannoli with custard.

  • I recommend filling them just before serving the cannoli, otherwise the pastry loses its crispness.
