The falafel or chickpea falafel with yogurt sauce as they are commonly called in Italy are chickpea patties.
Very easy to prepare, they are usually served with yogurt sauce or hummus, but you can also serve them with mayonnaise or Greek yogurt, which everyone will really appreciate.
We often make them especially as the days get warmer and we want something quick and tempting, maybe for a dinner with friends and some cold beer.

Ingredients for chickpea falafel
- 9 oz dried chickpeas
- 2 cloves fresh garlic
- Half onion
- 2 pinches ground cumin
- to taste chopped parsley
- 2 pinches salt
- 9 oz 0% fat Greek yogurt
- 2 tbsp mint (fresh)
- to taste extra virgin olive oil
- 2 pinches salt
- to taste pepper

Preparation of chickpea falafel
To prepare the chickpea falafel with yogurt sauce start by soaking the chickpeas in plenty of cold water for 18/24 hours, remembering to change the water at least once.
After soaking, drain and rinse the chickpeas well and put them in the blender together with the garlic, onion roughly chopped, and all the seasonings.
Blend at maximum speed for at least 5 minutes.
You should obtain a coarse puree.
If it seems too liquid, you can add a few tablespoons of breadcrumbs, but I never do.
Put your chickpea puree in a container, cover with plastic wrap, and refrigerate for 30 minutes.
Meanwhile, prepare the yogurt sauce by putting the Greek yogurt in a small container, adding finely chopped mint, 2 tablespoons of extra virgin olive oil, salt, and pepper, and refrigerate until ready to use.
Remove your chickpea puree from the fridge and with slightly wet hands, form small patties about 1.5 inches.
When you have finished preparing all the patties, pour plenty of frying oil into a large pan and fry a few at a time, turning them only when they are well browned on one side.
You can also bake them by adding a drizzle of olive oil to the baking sheet and drizzling the patties with more oil, bake for 15 minutes at 392°F.
The result will be much lighter but just as tasty, serve with yogurt sauce, or with some hummus.

Chickpea falafel with yogurt sauce can be stored in the refrigerator for 2 days in an airtight container.
