SAVORY CABBAGE AND MIXED CHEESE MUFFINS

The savory cabbage muffins are a must in my kitchen, a way to prevent waste by using leftovers from other preparations that always turn out to be a great success.

In particular, I use savory muffins for a tasty savory snack or as a delightful appetizer, and you can freeze them, so if an unexpected guest arrives.


They are ready in no time to offer with a glass of good beer.


You can enrich the savory muffins with cabbage or with cold cuts, or even with peas. You can get creative to make truly delightful appetizers, especially with little expense!!

Ingredients for the savory cabbage muffins

  • 2 1/2 cups all-purpose flour
  • Half packet baking powder
  • 5 oz savoy cabbage (cooked in a pan)
  • 5 oz latteria cheese (or mixed cheeses including caciotta, Asiago)
  • 3 eggs
  • 1/2 cup milk
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon pepper
  • 2 tablespoons dried parsley

Preparation of the savory cabbage muffins

  • To prepare the savory cabbage muffins and cheese, first preheat the oven to 428°F (220°C), then in a large bowl, mix the flour, baking powder, salt, and pepper.

  • Then add the grated or chopped mixed cheeses, the chopped cooked cabbage, the eggs, the milk, and the 2 tablespoons of extra virgin olive oil.

    Finally, incorporate the dried or freshly chopped parsley.

  • Mix all the ingredients well then fill the muffin molds, silicone ones work fine too, up to 3/4 full with the mixture using a spoon.

    Bake for about 20 minutes, until they are golden brown on top.

  • Anyway, I recommend doing the toothpick test, take them out, let them cool if

    you want to serve them as an appetizer.

You can freeze the muffins and let them thaw at room temperature, then heat them in the oven for a few minutes before eating.
