Ingredients for Puff Pastry Trees with Olive Cream
- 2 sheets puff pastry (rectangular)
- 5 oz black olives (pitted)
- 0.7 oz pickled capers
- 1.8 oz cream cheese
- 1 tbsp extra virgin olive oil
- 3 tbsp milk
- 2 tsp sesame seeds
- 2 tsp poppy seeds

- 1 Immersion Blender
Preparation of Puff Pastry Trees with Olive Cream
To prepare the puff pastry trees with olive cream, first make the olive cream.
Coarsely chop the olives with the capers, then place them in an immersion blender cup, add the oil and blend for a few seconds, then add the cream cheese and blend until creamy.
Taste and if you prefer it more flavorful, add some salt or ground pepper.
Preheat the oven to 428°F if possible with fan mode, and in the meantime, unroll the puff pastry keeping its parchment paper.
Using the cookie cutter, cut out the shapes, brush with milk, and sprinkle with poppy and sesame seeds together or some with poppy and others with sesame.
Bake the puff pastry trees with olive cream for 12 minutes or until the pastry is puffed and golden on the surface.
Remove from the oven and let cool.
Once cooled, gently cut the puff pastry trees in half using a smooth knife, fill with 1 tablespoon of olive cream, and reassemble the trees.
