Grilled Radicchio with Gorgonzola

Ingredients for grilled radicchio with gorgonzola

  • 8 heads red radicchio from Treviso IGP, late variety
  • 10.5 oz gorgonzola
  • 3 slices bruschetta bread (or stale bread)
  • 2 pinches salt
  • to taste extra virgin olive oil
  • to taste black pepper

Preparation of grilled radicchio with gorgonzola

  • To prepare grilled radicchio with gorgonzola, cut the bread into fairly small pieces and toast it on a cast iron griddle or pan adding a little extra virgin olive oil to form a crispy crust, once golden on one side, turn it and brown it on the other.

    Keep warm.

  • Meanwhile wash, dry, and cut each head of radicchio from Treviso in half, season with salt and pepper.

    Drizzle with a little extra virgin olive oil and grill on the hot griddle without adding more oil for a few minutes on each side until it is well grilled all over.

    Turn it over with kitchen tongs, the more charred it is, the better the flavor of the finished dish.

  • Meanwhile, cut the gorgonzola into pieces and once the radicchio is well grilled, distribute both the cheese and the previously toasted bread on top.

    Lower the heat, cover with foil for a few minutes until the cheese is melted.
