  • 1/2 cup Carnaroli Rice
  • 1/2 cup Venere Rice
  • 1/2 cup Red Rice (whole grain)
  • 2 tbsps Extra virgin olive oil
  • 3.5 oz Robiola (or stracchino)
  • 3.5 oz Ricotta
  • 1.5 oz Grana Padano DOP
  • 2 pinches Salt
  • to taste Parsley
  • 1 pinch Nutmeg

Preparation of creamy rice trio

  • To prepare the rice trio start by cooking each type of rice in a different pot for the time indicated on the packages.

  • Meanwhile, as the rice cooks, focus on preparing the creamy dressing.

    Therefore, mix the robiola with the olive oil and put it in a pan that can also hold the rice.

  • Also add the ricotta and mix very well, season with salt and nutmeg, and heat over low heat, stirring until you see a smooth, lump-free cream.

  • If the mixture turns out too dry, you can add a little more extra virgin olive oil.

  • Once the 3 types of rice are cooked, drain them into the pan with the dressing adding a few tablespoons of their cooking water.

  • Mix well to flavor and indeed mix the rice trio.

    Add just before turning off the stove the grated Grana Padano and some chopped parsley leaves and..
