The traditional Venetian pinza recipe, of which there is no single version, is an ancient rural dessert that was traditionally made using leftovers from Christmas and New Year’s meals. The main ingredient is yellow cornmeal and dried and candied fruit in varied proportions, but the essence is a delicious rustic cake that keeps well outside the fridge and is enjoyed especially on Epiphany with a good glass of mulled wine.

Ingredients
- 1 and 1/2 cups Yellow cornmeal
- 1/2 cup All-purpose flour
- 1/2 cup Sugar
- 1/3 cup Butter
- 3 and 1/3 cups Milk
- Half packet Baking powder
- 1/3 cup Raisins
- 8 Dried figs
- as needed Candied orange
- 2 Apples
- 1 tsp Fennel seeds
- 1 tsp Anise seeds
- 1/3 cup Grappa
Preparation of Traditional Venetian Pinza
To prepare the traditional Venetian pinza, first soak the candied fruit, raisins, chopped dried figs, and seeds in grappa.
In a saucepan, bring the milk to a boil. As soon as it starts boiling, add the sifted flours together, stirring continuously with a whisk to avoid lumps.
Cook the polenta for 12/15 minutes, ensuring it reaches a soft polenta consistency. If it seems too thick, add a bit more milk.
Once cooked, remove the polenta from the heat, add the butter, sugar, and the fruit and seeds drained from the grappa.
Add the baking powder dissolved in a little milk and mix very well to combine everything.
Preheat the oven to 350°F, line a 12 x 16-inch rectangular pan with parchment paper, and pour in the mixture.
Level the surface and bake for at least 50 minutes, preferably 60 minutes.
Remove from the oven, let it cool slightly before removing the traditional Venetian pinza from the mold.

The traditional Venetian pinza keeps well outside the fridge for 3 or 4 days under a cake dome.
