Ingredients for the grilled spiced salmon
- 4 salmon fillets
- 4 tablespoons extra virgin olive oil
- 1 teaspoon thyme
- 6 leaves sage
- 1 sprig rosemary
- 1 teaspoon marjoram
- 1 clove fresh garlic

Preparation of grilled spiced salmon
To prepare the grilled spiced salmon first mix the dried herbs in a small bowl.
Chop the garlic clove together with the sage leaves and add them to the other spices.
Incorporate the extra virgin olive oil and mix well.
Take the salmon fillets and with a kitchen brush generously coat each fillet first on one side and then the other with the spices and oil, then massage well to let the flavors penetrate the meat.
Let the spiced salmon rest for at least 30 minutes covered with cling film inside a container in the refrigerator.
After the resting time, the meat will be very flavorful, so salt and pepper on all sides.
Heat a cast iron grill well without adding any fat and place the salmon fillets, letting them sear over high heat for 3 or 4 minutes.
Turn the grilled spiced salmon and cook it on the other side for another 3 or 4 minutes, no more, otherwise it will be tough and dry.
