  • 2 lbs potatoes
  • 2 eggs
  • 1 cup flour
  • 2 pinches salt
  • 2 pinches pepper
  • 7 oz cooked ham
  • 7 oz mozzarella

Preparation of Potato Nests with Mozzarella and Ham

  • Prepare the potato nests with mozzarella and ham starting by cooking the potatoes, then wash them with the peel and cook them in a pot full of water until very tender.

    You can also cook them in the microwave with a little water for 6 minutes on high power.

  • While still hot and with the peel, pass them through a potato ricer that will hold back the peel, letting the mashed potatoes fall into a bowl.

  • Let them cool slightly, then incorporate the eggs, flour, salt, and pepper, and blend with a mixer until you get a thick, lump-free cream.

  • Place the mixture obtained in a piping bag with a star nozzle.

    Line a baking tray with parchment paper, then form the nests by making a circle of dough and then an ascending ring to make the edges of the nests.

  • Cut the ham and cheese into cubes.

    Preheat the oven to 180°C (356°F) in static mode.

  • Fill the nests with pieces of ham and cheese and bake on the middle rack of the oven.

  • Bake the potato nests for 30 minutes, checking the level of browning because every oven is different.
