- 2 cups mascarpone
- 4 egg yolks
- 1/2 cup granulated sugar
- 3 1/2 tbsp water

Preparation for Mascarpone Cream
To prepare the cream, first, dissolve the sugar in the water in a small saucepan and bring it to a boil.
You need to measure with the thermometer because the temperature must reach 250°F, otherwise watch the bubbles that will form on the surface, as soon as they appear, the syrup is ready.
Meanwhile, as the syrup reaches temperature, whip the egg yolks with an electric whisk or stand mixer and when the syrup is ready, pour it slowly into the bowl with the yolks, always continuing to whip.
In a bowl, work the mascarpone with a spatula to make it creamy, and once the yolks are well whipped and therefore cool, add them to the bowl with the mascarpone very gently.
The cream will be ready when you have incorporated the yolks with the mascarpone and it has become a smooth and homogeneous cream.
