Ingredients for Paccheri with Fresh Salmon
- 11 oz paccheri
- 10 oz salmon fillets (skinless and boneless)
- 16 oz cherry tomatoes
- Half onion
- 2 tablespoons extra virgin olive oil
- 2 pinches salt
- 3 pinches pepper
How to Prepare Paccheri with Fresh Salmon
Prepare the paccheri with fresh salmon starting with the cherry tomatoes. Wash them and cut them into 2 or 4 parts if they are large, finely chop the onion.
Sauté the onion with the olive oil until it becomes nearly transparent, then add the cherry tomatoes, stir to season, and salt.
Cook the cherry tomatoes for 10 minutes, then add the salmon fillet cut into irregular pieces.
Meanwhile, place a pot with plenty of lightly salted water on the heat to cook the pasta.
Cook the paccheri with fresh salmon until they are very al dente.
Add a ladle of the pasta’s cooking water to the pan with the sauce just before draining the paccheri.
Drain them into the pan with the sauce and toss everything together, adding plenty of freshly ground black pepper.
Serve the pasta with fresh salmon while still hot at the table and..

Storage of Pasta with Fresh Salmon
Pasta with fresh salmon should be eaten right after preparation, however, you can prepare the salmon sauce the day before and keep it in the refrigerator to heat while you cook the pasta.
