- 4 sea bream (or 8 fillets)
- 2 potatoes (large)
- 2 cloves garlic
- 1 teaspoon parsley
- 1 teaspoon basil
- 1 pinch marjoram
- 4 tablespoons extra virgin olive oil
- 4 pinches salt

- 1 mandoline slicer
- 1 baking tray
Preparation of Sea Bream in Potato Crust
To prepare the sea bream in crust if you want to make it whole and not in fillets clean the sea bream and remove the central bone.
You can have your trusted fishmonger do it.
If instead, you want to make fillets you can leave the skin on or remove it, I leave it because it becomes crispy in the oven and is very tasty so dry the fish well.
Season it with a pinch of salt, chopped herbs, and a drizzle of extra virgin olive oil.
Now peel the potatoes and slice them very thinly with a mandoline slicer or a very sharp knife and cover the fish fillets with the slightly overlapping potato slices.
Sprinkle with a few herbs and another drizzle of extra virgin olive oil over the potato surface then place the sea bream on a baking tray.
Bake in the central rack of your oven at 428°F, for at least 20 minutes turning on the grill in the last 5 minutes to brown the potatoes.
