The easy microwave pumpkin gratin recipe is, indeed, very easy, tasty, and flavorful to the right point, the seasonal side dish we really adore at home, I often prepare it trying to do something different each time, in fact this time I added spices to the breadcrumbs to make it savory without having to add anything else to the pumpkin.
It really takes little time to prepare and is excellent both very hot just made and at room temperature, you’ll see everyone will like it.

- 1.5 lbs Mantuan pumpkin
- 2 cloves garlic
- 3/4 cup breadcrumbs
- 1/4 cup parsley
- 3 tbsps extra virgin olive oil
- 2 pinches salt

Preparation
To prepare the easy pumpkin gratin recipe, you need to start with the pumpkin. Choose the pumpkin variety you prefer, remove the skin, seeds, and internal filaments, then wash and dry it.
Cut it into slices about a quarter-inch thick or a bit more if you like.
Mix the breadcrumbs in a bowl with the very finely chopped parsley, the clove of garlic squeezed with a garlic press, the salt, and the extra virgin olive oil. Mix very well and set aside.
Preheat the oven to 428°F, line a baking tray with wet and wrung-out parchment paper, and place the pumpkin slices, trying not to overlap them.
Bake for 10 minutes.

Spread the spiced breadcrumbs to cover all the pumpkin slices and cook with the microwave + grill version for another 6 minutes, placing the supplied rack under the tray to keep the food closer to the microwave grill.
