Ingredients for Homemade Greek Yogurt
- 18 oz plain natural yogurt
- 1 pinch salt (if you intend to use it in savory preparations)
- 1 tsp honey

Preparing Homemade Greek Yogurt
First of all, prepare the natural yogurt and then proceed to make the Greek one, otherwise you can get a good natural yogurt from the supermarket preferably organic.
To prepare the homemade Greek yogurt get a large enough fine mesh strainer.
Place it in a pot or a larger container that can hold it without touching the bottom.
On top of the strainer place a piece of cheesecloth or otherwise a clean, dry cloth not treated with bleach or fabric softeners (it would release flavor to the Greek yogurt).
Then pour the natural yogurt into the cheesecloth, close the yogurt with the edges of the cloth and cover everything with plastic wrap.
Place everything in the refrigerator for at least 5 hours, remember that the longer it stays in the fridge, the thicker the Greek yogurt will be, so adjust accordingly.
After the resting time in the fridge, take out the yogurt, lift the cloth and at the bottom of the container, you will see some whey expelled from the yogurt and inside the cloth, you will have about 12 oz of homemade Greek yogurt.
Now you can flavor the yogurt with honey, with salt (if you intend to use it in savory preparations) or leave it pure and then put it in an airtight jar and place it in the fridge.
The yogurt prepared this way lasts in the fridge for up to 5 days.If you want advice, don’t flavor it until you use it, if you want to dress a salad, salt it just before and add some freshly chopped herbs, mix and dress the salad.
If instead, you want to use it for breakfast, add a teaspoon of honey and some dried fruit or cereals and voilà, a healthy homemade breakfast is ready.
How to Store Greek Yogurt
Homemade Greek yogurt keeps in the refrigerator for 4 or 5 days in an airtight container. You can flavor the yogurt as you like, either sweet or savory.
