- 4 cups Manitoba flour

- 5.5 oz butter
- 0.5 oz fresh yeast

Put the flour, sugar, and the yeast previously dissolved in a little milk into the bowl of the stand mixer or our food processor.
Start kneading at low speed by pouring in the milk little by little, gradually increasing the speed.
Once all the milk has been added, knead for 5 minutes, then add one egg at a time, waiting for it to be absorbed by our dough before adding the next.Now that all the eggs have been absorbed by our dough, add the butter in pieces, always kneading and waiting for it to be incorporated before adding more butter.
Work the dough for another 10 minutes, then turn it over onto a lightly floured work surface and quickly shape it into a smooth ball (the dough will be very soft).
Place the dough in a bowl, cover it with plastic wrap, and place it in the refrigerator for at least 12 hours.
