Shrimp Risotto with Raspberry Powder

Ingredients for Shrimp Risotto with Raspberry Powder

  • 11 oz Carnaroli rice
  • 7 oz shrimp tails
  • 1 glass dry white wine
  • 1/2 white onion
  • 8 1/2 cups vegetable broth
  • 1 tbsp raspberry powder
  • to taste extra virgin olive oil
  • to taste salt

Preparation of Shrimp Risotto with Raspberry Powder

  • Chop the onion and set it aside.
    Remove the shell and vein from the shrimp.

  • Pour a drizzle of extra virgin olive oil into a saucepan, add the chopped onion and let it stew on low heat. Once it is soft, add the rice and increase the heat. Toast the rice well, then add the dry white wine and let it evaporate.

    Start adding a ladle of broth at a time to cook the risotto.

  • About five minutes before the end of cooking, add the shrimp. They need very short cooking, otherwise, they tend to become tough, but they will still release their flavor into the risotto.
    Once cooked, serve the risotto on individual plates, decorating with raspberry powder.
