The lemon curd is an excellent spoon dessert of English origin made with lemon, sugar, and eggs. I discovered this recipe by chance after receiving a gift of several pounds of organic lemons, and I wanted to use them all in delicious recipes.
An English-origin cream, lemon curd is usually used to fill tarts, cakes or to make excellent dessert cups perhaps with broken cookies.
Prepare the amount you need since it doesn’t keep for long, a maximum of 2 or 3 days in the refrigerator, as we are not talking about jam but a fresh spreadable cream.

Ingredients for Lemon Curd
- 2 lemons (organic)
- 2 eggs (medium)
- 2/3 cup sugar
- 1/4 cup butter

Preparation of Lemon Curd
To prepare the lemon curd, first grate the zest of one lemon, then juice both lemons and strain them, setting aside.
Whip the eggs with the sugar and lemon zest until you have a pale, frothy mixture.
Cut the butter into pieces and let it sit at room temperature.Now that the eggs are whipped, add the lemon juice and bring the mixture to medium heat, continuing to stir to prevent sticking, and bring the cream to a boil.
After a few minutes, you’ll see it starting to thicken and turn into a cream, then continue stirring with a manual whisk and add the butter pieces, stirring to melt them.
Now that it’s ready, let it cool at room temperature, covering with cling film directly in contact to avoid a crust forming on the surface, then you can place it in the refrigerator to rest for at least 2 hours before using.
You can use the lemon cream in its pure form simply spread on slices of bread, fill small tarts, cream puffs, cakes or use it for delicious spoon desserts, perhaps alternating between some biscuits, lemon cream, and meringue, and you’ll fall in love with this easy and delicious cream, so..
