The savory carnival fritters are also great for a tasty snack or the now-trendy Sunday brunch, after all, everything fried tastes better, and if we don’t fry during Carnival, what do we do? Once in a while, some fried treats are just fine.

Ingredients for savory carnival fritters
- 1 3/4 cups all-purpose flour
- 2 3/4 tbsp white wine
- 1 egg
- 2 tbsp extra virgin olive oil
- 1 tsp salt
- 1 tsp baking soda
- to taste black pepper
Preparation of savory carnival fritters
To prepare the savory fritters, start by sifting the flour with the baking soda and then place it in the bowl of your mixer or in a bowl to mix by hand.
Add the extra virgin olive oil and the egg, and start mixing with a spoon or in the mixer.
Add a generous handful of freshly ground black pepper.
Continue to knead now with your hands if you don’t have a machine to do it, and gradually add the salt and wine.
Knead until you have a smooth and firm ball, cover it with a tea towel, and let it rest for at least 30 minutes.
Now take your dough and roll it out thinly a few millimeters with a rolling pin.
Cut into strips approximately 4 inches long and 1.5 inches wide or more; I made them long and narrow to wrap cured meats around them.

Turn them as soon as they are golden on one side and drain them on kitchen paper to remove excess oil.

If you make them wider than mine, remember to make a cut in the middle like the sweet ones to facilitate cooking.
