Ingredients for the Deconstructed Cheesecake with Strawberries

  • 12 oz dry cookies
  • 1/2 cup butter
  • 1 lb strawberries
  • 1/2 cup sugar
  • 5.3 oz mascarpone
  • 7 oz sour cream
  • 1/2 cup heavy cream

Preparation of Deconstructed Cheesecake with Strawberries

  • To prepare the deconstructed cheesecake with strawberries, first remove the green leaves from the strawberries, then cut them in half and then into irregular pieces.


    Sprinkle them with 1/4 cup of sugar and let them marinate for 30 minutes in the refrigerator.

  • In the meantime, work the mascarpone with the sour cream using electric beaters to soften everything.


    Whip the heavy cream with the remaining sugar until stiff peaks form, then gently fold the whipped cream into the mascarpone using a rubber spatula.

  • In this step, you must handle with care to avoid deflating the whipped cream, so set aside in the fridge.

  • Coarsely crumble the cookies inside a plastic bag using a meat tenderizer or a rolling pin.


    Melt the butter in a bain-marie or in the microwave for a few minutes.

  • Now place the cookies in a bowl and add the butter, then quickly work with your hands to absorb the butter into the cookies.

  • You can now assemble the deconstructed cheesecake with strawberries by placing a generous spoonful of cookies at the bottom of the glasses, pressing them down well with the back of a spoon.

  • Cover the cookies with the mascarpone and cream mixture, distributing some of the strawberries drained from the liquid they released on top.

Notes

The deconstructed cheesecake with strawberries can be stored in the refrigerator for up to 1 day. However, you can prepare the cream the day before, and if the strawberries are left with the sugar for longer, they will taste even better.
