Savory Carnival Fritters

Savory carnival fritters are amazing!! Usually, during Carnival, many sweet dishes are made, including sweet fritters, but there is also a savory version, with rice or without, with sun-dried tomatoes, with olives, and even with anchovies.

Then, as I always say, why make them only for Carnival? In fact, at our house, they’re made often for any occasion, especially Easter, Christmas, and family gatherings.

A very simple recipe, as I was saying, to enrich however you like, making them different and delightful each time to amaze everyone.

Ingredients for Savory Carnival Fritters

  • 2 cups all-purpose flour
  • 1 packet instant yeast for savory preparations
  • 6.8 fl oz sparkling water (very cold)
  • 12 black olives
  • 6 sun-dried tomatoes in oil
  • 1 tsp chopped parsley
  • 2 pinches salt
  • to taste black pepper

Preparation of Savory Carnival Fritters

  • To prepare the savory carnival fritters, first finely chop the olives and the drained sun-dried tomatoes into very small pieces.

  • In a bowl, mix the flour, instant yeast, salt, and pepper, and gradually add very cold sparkling water while stirring with a fork.

    Finally, add the finely chopped parsley, tomatoes, and olives, cover the bowl with plastic wrap, and let it rest in the refrigerator for 30 minutes.

  • After resting, heat plenty of oil for frying in a deep and narrow pan, then take the batter from the fridge and, with the help of two wet spoons, take small amounts of batter.

  • Let them slide into the hot oil and fry a few savory carnival fritters at a time until they are puffed and golden on all sides, turning them a couple of times.
